No Butter White Wine and Herb Sauce Recipe


White wine and herb sauce recipeThe subtle flavor of dry white wine combines perfectly with the organic Herbs de Provence in this fresh sauce recipe to create a delicious, light sauce recipe that is ideal for use on fish, scallops, over angel hair pasta or drizzled over fresh steamed asparagus. 1 3/4 cups organic chicken stock
1/4 cup dry white wine - Pinot Grigio or dry Chardonnay
2 teaspoons Organic Herbs de Provence
A dash of Cayenne pepper
1 1/2 tablespoons organic extra virgin olive oil
3 tablespoons flour
Sea salt and pepper to taste

In a medium skillet, warm olive oil or medium heat. Add cayenne pepper to warm olive oil and whisk together until mixed. Slowly add flour and stir with a whisk until a thick paste forms. Remove skillet from heat and slowly add the chicken stock and white wine while constantly whisking until the liquids are completely incorporated into the olive oil and flour paste. Return to medium heat and add the Herbs de Provence, simmer while stirring until the sauce thickens. Add additional wine to reach desired consistency. Salt and pepper to taste.

Pinot Grigio is a superb white wine not only to drink but to cook with. Pinot Grigio, also know as Pinot Gris in France, is a refreshing white with plenty of fruit character that has up front aromas of pear and white peach, with hints of almonds, vanilla and cherries. Flavors are similar: rich and soft, with pear and peach. A wonderful wine to serve with light pasta dishes, shrimp, chicken fettuccini Alfredo, or anything you would pair with Chardonnay

Organic Herbs de Provence: Herbs de Provence is a traditional blend of fresh herbs that are dried and typically used in cuisine from the south of France. Herbs de Provence contains basil, rosemary, thyme, parsley, marjoram, Provence lavender and French tarragon. Always use organic Herbs de Provence in all of your cooking whenever possible to avoid added chemicals, preservatives and pesticides.
