Sweet Cornbread Recipe
This savory, sweet cornbread recipe produces moist cake-like cornbread that melts in your mouth. Our recipe has been compared to Marie Calendar's Cornbread recipe but we think it is much better! Serve this cornbread hot from the oven with raw honey drizzled on top.

Serve this luscious, sweet cornbread with a chilled spinach salad or with hot and spicy chili for a nice contrast of flavors. Reheat leftover cornbread for a delicious dessert.

1 1/4 cups all-purpose flour
3/4 cup yellow or white cornmeal
2 teaspoons baking powder
1/3 cup sugar
3/4 teaspoon sea salt
1 1/4 cups low fat milk
1/4 cup organic sweet cream butter
1 fresh egg

Preheat oven to 400 degrees. Grease and lightly flour an 8x8 baking pan or a round single layer cake pan. Sift together flour, cornmeal, baking powder, sugar and salt. In a separate mixing bowl combine butter and egg using a wire whisk, beat until fluffy. Stir in milk. Add the wet mixture to the dry mixture stirring until ingredients are just combined. Batter should be thick and slightly lumpy.
Pour the batter in the baking pan and bake for 25-30 minutes or until top is golden brown and a toothpick inserted in the center comes out dry.

Let cool 5 minutes before slicing and serving. Serve warm with butter and raw honey.
