Roasted Vegetable Casserole

Perfect for a cold winter day, or for an informal get-together. Use a firm red potato such as Kerr's Pink or Cherry Red for this recipe if possible.
Serves 6 -8.

Preheat oven to 425 degrees. Lightly oil a 9 x 13 inch baking dish with organic olive oil.


3 tablespoons organic olive oil
4 medium red potatoes, cut in 1/2 cubes
2 cloves hardneck garlic, minced
3 zucchini, cut in 1 inch chunks
1 large red onion, sliced in large sections
1 14.5 ounce can organic diced tomatoes
1/2 teaspoon sea salt
fresh ground pepper to taste
1 teaspoon dried thyme or 1 tablespoon fresh thyme chopped
1 teaspoon dried oregano or 1 tablespoon fresh oregano chopped   
2 1/4 cups freshly grated Parmesan cheese
1/3 cup water
2 tablespoon white wine vinegar

Combine potatoes, zucchini, onion, garlic, and tomatoes in baking dish. Salt and pepper to taste. Add herbs and 2/3 cup grated cheese, toss to coat.

Combine water, vinegar and 3 tablespoons of olive oil. Whisk together. Drizzle over potatoes and vegetables.

Bake in oven until potatoes are tender, turning as needed, for approximately 45-50 minutes. When potatoes start to brown, sprinkle with remaining grated cheese and bake for 5-10 minutes or until cheese is browned and bubbly.

Remove, let sit 2-3 minutes, then serve.
