Quick and easy to make, serve this delicious hummus as an appetizer with fresh vegetable sticks, with baked sweet potato chips or with tuna salad.
2 (16) ounce cans organic garbanzo beans, drained and rinsed
2 tablespoons organic olive oil
2 medium red bell peppers, cut into pieces
2 tablespoons tahini (sesame seed paste)
2 tablespoons lime juice
4 tablespoons water
2 cloves garlic, minced
sea salt and ground pepper to taste
3 green onions or scallions, sliced
Combine all ingredients, except green onions, in a food processor and blend until smooth. Mix in green onions and serve. Makes 16 servings.
