Red Pepper Hummus Recipe

Quick and easy to make, serve this delicious hummus as an appetizer with fresh vegetable sticks, with baked sweet potato chips or with tuna salad.



2 (16) ounce cans organic garbanzo beans,   drained and rinsed
2 tablespoons organic olive oil                       
2 medium red bell peppers, cut into pieces      
2 tablespoons tahini (sesame seed paste)        
2 tablespoons lime juice
4 tablespoons water
2 cloves garlic, minced
sea salt and ground pepper to taste
3 green onions or scallions, sliced

Combine all ingredients, except green onions, in a food processor and blend until smooth. Mix in green onions and serve. Makes 16 servings.

Hummus is made from fiber rich garbanzo beans. This soluble fiber can help lower cholesterol and stabilize blood sugar levels after meals. The red peppers in this recipe add a sweet flavor along with a good dose of Vitamin C and Vitamin A.
