Mushroom Herb Sauce with Shallots Sauce Recipe


A robust sauce that is good with almost anything. The subtle flavor of the Holland Red Picasso shallots and the Crimini mushrooms combine for a complex yet light flavor that works beautifully with red meat, pork, chicken or turkey.

2 tablespoons organic virgin olive oil
1 clove garlic, finely minced
3 large
Holland Red Picasso shallots, finely chopped
1/2 pound Crimini mushrooms, sliced
1/3 cup Marsala wine
1 tablespoon chopped fresh organic basil or 4 ice cubes frozen basil
1 tablespoon fresh parsley
Sea salt and fresh ground pepper to taste

In a heavy skillet, warm olive oil over medium heat. Add garlic and shallots and saute until fragrant, about 2-3 minutes. Add sliced mushroom and continue cooking for 5-7 minutes over medium heat, stirring occasionally until the mushrooms are soft. Stir in the Marsala wine and cook over medium-high heat for an additional 2-3 minutes. Add basil and parsley, and sea salt and pepper to taste, continue cooking for another 2-3 minutes or until all ingredients are heated thoroughly. If using frozen basil, add an additional 2-3 minutes of cooking time.
