Muffin and quick breads are very easy to make and are ideal for the
busy cook. A homemade hot biscuit can transform the simplest meal into a dinner, a loaf of zucchini bread or banana bread makes the ideal gift and a fresh, hot muffin turns a cup of coffee into a breakfast! Muffin recipes are the easiest of all quick bread recipes and contain only 3 basic steps.
Mix the dry ingredients (flour, salt, leavening, sugar, etc.) thoroughly with a whisk to incorporate all dry ingredients and to fluff up the flour.
Whisk the wet ingredients together thoroughly. Wet ingredients include eggs; melted butter or olive oil; honey, molasses, or brown sugar; and the main liquid milk, yogurt, sour cream or buttermilk.
Finally combine the two mixtures (wet and dry) by mixing or folding briefly, just enough to moisten the dry ingredients. When making muffin recipes do not over mix! Most muffin recipes will appear lumpy or uneven, which is perfect. If you over mix your muffin recipe you will end up with rubbery, tough muffins rather than light and fluffy ones.
