To cook delicious cuisine even from the easiest of recipes, accurate measuring is a must. Even after my numerous years of cooking and developing organic recipes and easy recipes, I still have to refer back to a cooking measurement and equivalent chart from time to time. Below are handy measuring equivalents for teaspoons, tablespoons, cups, pints, fluid ounces, and more. Also included are the conversions for metric and U.S. systems of measurement.
Measuring Ingredients for Cooking:
Dry Ingredients: Fill the measuring cup or measuring spoon loosely. Do not pack dry ingredients, except for brown sugar, when measuring. Level off the measuring cup or measuring spoon with a straight-edged knife.
Liquid Ingredients: When you are measuring cooking oils, olive oil, honey or molasses, pour into measuring cup to the desired level. Use a rubber spatula to scrape out the measuring cup to get the full amount of the ingredient. See Cooking Tip
Recipe Weights and Measures:
In contemporary recipes the amount of each ingredient in the recipe is given in measures rather than in weight. Older recipes and most foreign recipes use weights. When adapting a recipe from another country it may be necessary to experiment a little since the ingredients may be slightly different from those we use in the U.S.
Easy Recipe Measurements
A few grains, pinch, dash (dry) + less than 1/8 teaspoon
A dash (liquid) = a few drops
3 teaspoons = 1 tablespoon
1/16 cup = 1 tablespoon
1/8 cup = 2 tablespoons
1/6 cup = 2 tablespoons + 2 teaspoons
1/4 cup = 4 tablespoons
1/3 cup = 5 tablespoons + 1 teaspoon
1/2 cup = 8 tablespoons
2/3 cup = 10 tablespoons + 2 teaspoons
3/4 cup = 12 tablespoons
Nuts:
4 ounces = 1/4 pound
4 ounces = 2/3 cup chopped
100 grams = 5/8 cup chopped
Rice (uncooked):
1 pound = 2 cups
Easy Recipe Ingredient Substitutions
1 square chocolate = 3 tablespoons coca plus 1 teaspoon shortening or butter
1 cup pastry flour = 1 cup all-purpose flour less 2 tablespoons
1 tablespoon cornstarch = 2 tablespoons flour (when used as thickening)
1 teaspoon baking powder = 1/4 teaspoon baking soda plus 1/2 cream of tartar
1 cup fresh milk = 1/2 cup evaporated milk plus 1/2 cup water
1 cup fresh milk = 1/2 cup condensed milk plus 1/2 cup water and reduce sugar used in recipe
1 cup fresh milk = 4 teaspoons powdered whole milk plus 1 cup water
