Low-fat Strawberry Muffin Recipe


Petite, sweet Alpine Strawberries and almonds combine for a lush, Alpine strawberry muffin recipelow-fat muffin! A decadent low-fat muffin recipe using just picked fresh Alpine Strawberries, a hint of almond extract and almond slivers all blended together in a fluffy muffin. Serve these low-fat strawberry muffins straight from the oven and no one will know that they have only 4 grams of fat per serving! When making this low-fat strawberry muffin recipe do not overmix the batter. Reduced-fat muffins are prone to be tough if you over mix. Spoon the batter into a muffin pan to prevent bursting any air bubbles.

Whisk together in a large mixing bowl:
2 cups all-purpose flour
2/3 cup sugar
4 teaspoons baking powder
1/2 teaspoon Sea salt
1/4 teaspoon baking soda
1/4 teaspoon cinnamon

Whisk together in a medium size bowl:
1 large egg
3 tablespoons organic virgin light olive oil
1/2 teaspoon almond extract
1 teaspoon vanilla
1 cup nonfat yogurt

1 cup fresh Alpine Strawberries, leave whole
1/4 cup almond slivers

Preheat oven to 400 degrees. Lightly grease muffin pan or line muffin pan with paper baking cups.

Add the wet mixture to the flour mixture and mix together with a few light strokes by folding in until the dry ingredients are just moistened. Do not overmix; the batter will be light but lumpy. Fold in the fresh Alpine Strawberries using just a few strokes.

Carefully spoon the batter into the muffin pan filling each muffin 2/3 full. Bake 10-12 minutes or until a toothpick inserted into the center of several muffins comes out clean. Your baking time will vary depending upon your oven. Let cool 2-3 minutes before removing from pan. Serve at once.
