Low-fat Blueberry Muffin Recipe


Blueberries are healthy and delicious in muffin recipes and our low-fat blueberry muffin recipe just made them better! Serve these low-fat blueberry muffins straight from the oven and no one will know that they have only 4 grams of fat per serving! When making this low fat blueberry muffin recipe do not overmix the batter. Reduced-fat muffins are prone to be tough if you over mix. Spoon the batter into a muffin pan to prevent bursting any air bubbles.



Whisk together in a large mixing bowl:
2 cups all-purpose flour
2/3 cup sugar
4 teaspoons baking powder
1/2 teaspoon Sea salt
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg

Whisk together in a medium size bowl:
1 large egg
3 tablespoons organic virgin light olive oil
1 teaspoon vanilla
1 cup nonfat yogurt

1 1/2 cups fresh blueberries

Preheat over to 400 degrees. Lightly grease muffin pan or line muffin pan with paper baking cups.

Add the wet mixture to the flour mixture and mix together with a few light strokes by folding in until the dry ingredients are just moistened. Do not overmix; the batter will be light but lumpy. Fold in the fresh blueberries using just a few strokes.

Carefully spoon the batter into the muffin pan filling each muffin 2/3 full. Bake 10-12 minutes or until a toothpick inserted into the center of several muffins comes out clean. Your baking time will vary depending upon your oven. Let cool 2-3 minutes before removing from pan. Serve at once.
