Healthy Carrot Spice Cookie Recipe

The spicy flavor of the cloves adds as extra punch to these healthy cookies that have only 25 calories each. The applesauce and egg whites replace the whole eggs and shortening typically found in this recipe.

2 cups whole wheat flour  
1/2 teaspoon ground cloves                             
1 cup sugar  
1 teaspoon cinnamon  
1 teaspoon baking soda 
1 1/2 cups finely grated carrots                                           
4 egg whites   
1/4 cup powdered sugar                                               
1/2 cup applesauce

Preheat the oven to 350 degrees. Spray cookie sheets with non-fat cooking spray.

Combine all ingredients except powdered sugar in large mixing bowl. Mix well. Drop the cookie dough by rounded teaspoonfuls onto the sprayed cookie sheets. Bake cookies for 6 to7 minutes or until bottoms are lightly browned. Once cooled, sprinkle the tops with powdered sugar. Makes 6 dozen cookies
