Our organic recipes are packed with ingredients that mirror many of those included in Mediterranean diets such as very low use of butter, high use of organic olive oil, high use of organic vegetables, fruits and legumes, moderate use of non-refined carbohydrates such as whole grain breads and pastas, moderate use of fish and seafood, moderate use of dairy products and low use of red meats and high saturated fats.

Years ago when we started our organic farm in Oregon we were not aware that we were cooking and eating a Mediterranean diet, rather we just cooked using produce that we grew and tried to develop recipes that enhanced the fresh taste of the food rather than mask it. You will find that when you cook with fresh, organically grown ingredients high fats such as butter and lard tend to mask the flavors rather than enhance them.  I now use organic extra virgin olive oil for almost everything including baking cakes and cookies rather than butter or shortening.
