Years ago when we started our organic farm in Oregon we were not aware that we were cooking and eating a Mediterranean diet, rather we just cooked using produce that we grew and tried to develop recipes that enhanced the fresh taste of the food rather than mask it. You will find that when you cook with fresh, organically grown ingredients high fats such as butter and lard tend to mask the flavors rather than enhance them.
