Quick Flank Steak Pepper Recipe

If you have 20 minutes, you can pull together this delicious steak dinner that tastes like you spent all day preparing.  Our quick dinner recipe uses fingerling potatoes, but you can substitute for baby potatoes if fingerling potatoes are not available.



1 - 1 1/2 lbs flank steak
1 tablespoon Fresh Organic Beef Rub
1 red onion, cut in large slices
1 red bell pepper, ribs and seeds removed, cut in large slices
1 green bell pepper, ribs and seeds removed, cut in large slices
4 fingerling potatoes cut in quarters
2 tablespoons organic live oil
1 tablespoon fresh rosemary, minced finely
1 clove organic garlic, minced

Heat broiler. Set broiler rack so that the top of the pan is 4 inches from the heat source. Tightly cover broiler pan with foil.

In a large bowl, toss onion, peppers, potatoes with rosemary and olive oil. Place on one side of the broiler pan.  Rub steak with beef rub on both sides. Drizzle with 1 teaspoon of olive oil. Season with sea salt and ground pepper. Place on broil pan next to potato mixture.

Broil; tossing potatoes mixture every 4-5 minutes. Broil until steak is medium-rare (135 degrees on a meat thermometer), approximately 12 - 15 minutes, depending on your oven. Remove steak when done and place broiler pan on cutting board. Cover steak and potato mixture with foil, and let rest for 5 minutes. Slice steak thinly and serve with potato, pepper mixture on the side.
