Egg White Omelet with Salsa and Goat Cheese

A healthy high protein (17 grams) breakfast that is low in calories (160 per serving) and takes less than 10 minutes to make. You can mix this recipe up by adding chopped spinach, minced red bell peppers or thinly sliced red onion for added flavor.


4 egg whites
1 tablespoon water
sea salt and ground pepper
1 teaspoon organic olive oil
1 garlic clove, minced
3 tablespoons hot salsa
2 tablespoons crumbled goat cheese or feta cheese


In a medium glass bowl, whisk egg whites with water; season with salt and pepper. Heat olive oil in 8-inch high quality non-stick skillet over medium heat; add garlic. Saute 1 minute or until fragrant.

Add egg whites to skillet; cook until nearly set; using a heatproof rubber spatula to lift the edges of the egg whites to allow the uncooked whites to come in contact with the skillet.
When just cooked, sprinkle crumbled cheese on top and top with salsa. Slide onto plate, folding omelet over on itself. Serve at once.
