
Quick and Easy Cornbread Recipe

Our quick and easy cornbread recipe is perfect to make anytime of the year. Serve it with salads in the summer along side fresh roasted corn on the cob; in the fall with our delicious easy Chili recipe; or in the winter with roasted turkey for Thanksgiving.

1 1/2 cup yellow or white cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 eggs
1 cup low-fat milk
3 tablespoons organic olive oil or organic sweet butter
Preheat oven to 400 degrees. Grease and flour an 8 inch backing pan or single layer cake pan and place in oven to heat while mixing batter.
Sift together cornmeal, all-purpose flour, baking powder, sugar and salt in a medium glass bowl. Combine eggs and oil mixing with a whisk. Add in milk and stir. Pour wet ingredients into dry ingredients mixing until just combined. Do not over mix, batter should be thick and slightly lumpy. Pour batter into hot pan. Bake 20 - 30 minutes - clean toothpick test. Cool 5 minutes before serving.
