Buttermilk Thyme Drop Biscuit Recipe
Drop biscuits are quick and easy to make, and add a nice fresh, baked smell in the house. Serve with butter. If you do not have buttermilk in the house, you can substitute by adding 1 tablespoon of white vinegar to whole milk, let sit undisturbed for 5-7 minutes before using. The white vinegar will cause the milk to curdle, creating a liquid similar to buttermilk.
1 cups all-purpose flour
1 tablespoon minced fresh thyme or 1 teaspoon dried organic thyme
1 tablespoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon sea salt
4 tablespoons cold, unsalted butter, cut into small squares
1 cup buttermilk
Preheat oven to 425 degrees. In a large bowl, whisk together flour, thyme, baking powder,
baking soda and salt.
Using a pastry cutter, pictured here, incorporate the cold butter with the flour mixture. The mixture will resemble small pebbles or peas when properly cut into.
Mix in the buttermilk mixture, stirring until a sticky batter forms. Do not over mix! Add a little more buttermilk if dough is too dry.
On a nonstick baking sheet, drop a tablespoon of batter. Continue until all batter is used up. Makes approximately 8 - 10 biscuits, depending on size.
Bake until golden brown, 15 to 20 minutes, rotating sheet halfway through. Biscuits are done when lightly browned on top. Remove from oven, let cool 2 minutes and serve warm.
