
Berry and Pear Crisp Recipe
Oatmeal Topping:
1/4 cup flour
1/4 cup packed light brown sugar
2 tablespoons white sugar
1/2 teaspoon Organic Pumpkin Pie Spice
1/2 cup rolled oat ( do not use quick cooking oats)
4 tablespoons cold, unsalted butter, cut into small squares
In a bowl combine all ingredients except butter. Using a pastry blender, or two knives, cut in cold butter with sugar mixture, until large, moist clumps form; set aside.
Our quick Berry and Pear Crisp recipe uses fresh blueberries
but you can substitute with a blueberry, raspberry mix or use frozen
berries if fresh are not available. If using frozen berries, let thaw
first, and drain excess fluid.
2 cups fresh berries
5 to 7 pears, approximately 3 pounds, peeled and cut into 3/4 inch pieces
2 tablespoon flour
1 tablespoon fresh lemon juice
3 tablespoons white sugar
Preheat oven to 400 degrees. In a glass bowl, combine pears with lemon juice, berries, sugar and flour. Toss to coat. Using a shallow 2 quart baking dish, spread the pear mixture out evenly; sprinkle with oatmeal topping.
Bake until fruit is tender and top is golden brown, about 30 -40 minutes depending on your oven. Remove when done, let cool 15 minutes before serving.
