Apple Walnut Muffin Recipe


Apple Walnut Spice Muffin RecipeA great way to get an apple a day in a healthy muffin recipe! Use granny smith apples for a tangy muffin and red apples for a sweeter muffin.

At our farm I bake dozens of these in the fall when the apples are fresh from the orchards. You can bake this muffin recipe in a large muffin pan or use mini muffin pans for snack size treats. You can substitute pecans for walnuts in this muffin recipe.

Whisk together thoroughly:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon Sea salt

Whisk together in a mixing bowl:
2 large eggs
3/4 cup sugar

Stir in 1 1/2 cups packed finely grated peeled apples ( approx. 2 medium apples). Let stand for 10-15 minutes.

Stir in:
5 tablespoons organic extra virgin light olive oil
1/2 cup chopped walnuts

Preheat oven to 400 degrees. Lightly grease muffin pan or line muffin pan with paper baking cups.

Add the flour mixture into the wet mixture and fold until the dry ingredients are just moistened. Do not overmix! The batter will not be smooth but should be lumpy.

Carefully spoon the batter into the muffin pan filling each muffin 2/3 full. Bake 14-16 minutes or until a toothpick inserted into the center of several muffins comes out clean. Your baking time will vary depending upon your oven. Let cool 2-3 minutes before removing from pan. Serve at once.
